Honey-roasted pecans with blueberries was my flavor combination entered into a Quaker Oats contest. While I obviously didn’t win, this bowl of goodness is certainly victorious in my kitchen. Cooking or baking blueberries with white sugar can quickly become candy-like and over sweetened, so the carmelized coating of honey on the pecans adds just enough savory sweetness for most palates. Simply add more honey if you have more of a sweet tooth. Using these two often-neglected ingredients will transform any otherwise mundane snack … whether you’re making oatmeal, pancakes, muffins, trail mix or simply topping for frozen yogurt or ice cream.
