When cherry tomatoes are in season, they’re absolutely fantastic … and when homegrown, even more so. They’re oh-so sweet, super juicy. Simple “easy idea” recipes are the best way to experience the garden-fresh flavors. Cherry tomato bites are the quickest and easiest 3-ingredient appetizer in the world. Anyone can do it!
Making these is not rocket science. Aside from being easy, it’s also a great way to utilize any lingering sandwich bread that can’t really be paired well to make a cohesive sandwich. Simply cut up some single bread slices (toast it if you want to), cut your tomatoes in half cross-wise, then fuse the two together using some hummus. Furthermore, making a full sandwich out of cherry tomatoes doesn’t really work because they don’t really lay flat and fall off. So, these bite-sized, open-faced snacks are the next best option.
Hummus is an obvious go-to ingredient for cherry tomato bites. But really, any hummus-like ingredient will work quite well as long as it helps the tomatoes stay intact. If you’re a fan of curry and want a Jamaican twist, swap out the hummus for my Sweet Potato Dip with Curry and Candied Ginger like I’ve done. Also, try swapping that out for my Black-eyed Pea Dip with Roasted Garlic.
