When a friend came back from a trip to Italy bragging about his balsamic vinegar knowledge, it was brought to my attention that truly good balsamic vinegar should take on almost a thick, syrup-like consistency. I immediately went home and looked down upon all of the thin and watery brands that were tucked away in my cupboards.
